Gidon Eshel, a geophysicist, has been studying the environmental and geophysical consequences of human diet for decades. A former beef rancher, his research has demonstrated that the lion’s share of the very significant adverse environmental impacts of food production is due to beef production. He is an environmental consultant and a Bard College professor. Free pizza lunch will be provided.
