She sends cricket chips. They\u2019re easy to make (just mix cricket powder, corn flour, water, spices, and bake until crisp), they\u2019ve got a nutty flavor profile, they\u2019re packed with protein \u2014 and the kids love them. Insects just may be one of the planet\u2019s most sustainable, yet underutilized (at least in western countries), sources of nutrition. And using this protein to share sustainable, tasty treats isn\u2019t just an area where Stull dabbles; she\u2019s a leading expert.<br><span id=\"docs-internal-guid-86632673-7fff-bfc4-e256-247dcf4354ce\" style=\"white-space: normal; caret-color: rgb(0, 0, 0); color: rgb(0, 0, 0);\"><\/span><\/p>\n\n\n\n<p class=\"gb-text\">Stull\u2019s job title is complex. \u201cIf you asked me, I would say I am an interdisciplinary environmental health scientist,\u201d she says. \u201cI\u2019m passionate about the health and well-being of people and the planet.\u201d Seventy-five percent of the time, she\u2019s a faculty associate at the University of Wisconsin\u2013Madison in both the Nelson Institute and the College of Agricultural Life Sciences. The other 25 percent, she consults with organizations around the world on projects related to agriculture, nutrition, climate change, and sustainable food systems. With a bachelor\u2019s in nutritional science from Colorado State University, a master\u2019s in public health nutrition from Kansas State University, and work experience with U.S. Agency for International Development programs, she traveled the world exploring interventions to bring healthier food to places of need \u2014 from schools in sub-Saharan Africa and Madagascar to hospitals in the West Bank. \u201cWe were always talking about \u2018nutrition,\u2019 but we weren&#8217;t talking about food or agriculture,\u201d she says. \u201cAll the conversations we were having were centered around crop nutrients \u2026 we weren&#8217;t talking about <em>how<\/em> they were grown; we weren&#8217;t talking about how they were processed. In the real world, what actually works?\u201d Wanting to understand the systems surrounding health and nutrition \u2014 agriculture, policy, the environment, climate change \u2014 she looked for a PhD program that would support her varied questions. In her second semester, she joined the Nelson Institute\u2019s Center for Sustainability and the Global Environment, working in a lab group under Jonathan Patz, the Nelson Institute\u2019s John P. Holton Chair in Health and the Environment. Her interests in the health, sociological, and environmental aspects of food systems came together when she started exploring insects as a sustainable food source. From there, she ran laboratory experiments, an ethnographic qualitative field study, <em>and<\/em> a clinical trial, which culminated in a <a href=\"https:\/\/news.wisc.edu\/eating-crickets-can-be-good-for-your-gut-according-to-new-clinical-trial\/\">study<\/a> published in <em>Scientific Reports<\/em>. \u201cImpact of Edible Cricket Consumption on Gut Microbiota in Healthy Adults\u201d has since been cited by over 100 news sources and remains one of the highest-ranking articles today. (Stull and the original team just completed a follow-up to that study, where they looked at how isolated insect fiber affects people with irritable bowel syndrome. It was <a href=\"https:\/\/pubs.rsc.org\/en\/content\/articlehtml\/2025\/fo\/d5fo01540e\">just published<\/a> in September 2025.)<\/p>\n\n\n\n<p class=\"gb-text\">\u201cI never had plans to stay in academia,\u201d Stull says, but a postdoc opportunity in the UW\u2019s <a href=\"https:\/\/ghi.wisc.edu\/\">Global Health Institute<\/a> \u2014 then led by Patz \u2014 kept her on campus. There, she learned that careers in the academic sector weren\u2019t as black and white as she thought. \u201cI found out about non-tenure track careers at the UW that I didn&#8217;t really know existed, like scientist and extension roles.\u201d Stull is now a colead of the <a href=\"http:\/\/shall.wisc.edu\/\">Soil Health and Agroecological Living Lab<\/a> (SHALL) and a researcher with the <a href=\"https:\/\/www.climatesolutionsforhealth.org\/\">Climate Solutions for Health Lab<\/a>. She built a career that\u2019s as interdisciplinary as her interests: from teaching undergrads in both the global health and agroecology majors to conducting research on soil health and farmer experiences across Wisconsin to starting and <a href=\"https:\/\/www.mighti.org\/\">leading a global nonprofit<\/a> that connects health, justice, and the environment with a focus on women. Stull\u2019s arc shows that a PhD, particularly from the Nelson Institute, can offer breadth <em>and <\/em>depth. \u201cOne thing I always wanted to do was be able to sit in a room and understand what everyone is saying, not just the nutritionists or not just the farmers,\u201d she says. \u201cI wanted to get a PhD so that I could effectively translate <em>across<\/em> disciplines.\u201d<\/p>\n\n\n\n<figure>\n<img loading=\"lazy\" decoding=\"async\" width=\"1921\" height=\"751\" class=\"gb-media-efb6e46f wide-full\" alt=\"Stull (far right, back row) and the women of MIGHTi. But Stull was no stranger to Africa; since 2008, she\u2019d worked on several agriculture-, health-, and gender-related projects in countries including Kenya and South Africa. Building on those decades of work, she started a long-term research project with a UW colleague called <a href=\"https:\/\/www.mighti.org\/\">MIGHTi<\/a>: the Mission to Improve Global Health Through Insects. As Stull\u2019s knowledge and network grew, so did the project: in 2022, MIGHTi became a registered nonprofit (thanks to support from cofounder, <a href=\"https:\/\/www.chhs.colostate.edu\/bio-page\/brittney-sly-8109\/\">Brittney Sly<\/a>) added Mwansa Mwatokwani as its Zambia-based director, and changed the <em>i <\/em>from <em>insects <\/em>to <em>innovation. <\/em>MIGHTi now focuse on women with a mission to improve health and wellbeing through innovation, collaboration, and environmental stewardship.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Face Your Bug Bias<\/h3>\n\n\n\n<p>Beyond touting the nutritional and sustainable aspects of edible insects, Stull also breaks down cultural barriers that give Americans the \u201cick response.\u201d On campus, she\u2019s helped organize <a href=\"https:\/\/entomology.wisc.edu\/2022\/04\/26\/swarm-to-table-brings-edible-insects-to-the-madison-community\/\">Swarm to Table<\/a>, a celebratory and positive event focused on the many benefits and beauty of insects, now in its fifth year. That\u2019s where she had one of her favorite insect preparations: scorpion crackers. \u201cNot <em>technically<\/em> an insect, but a colloquial insect,\u201d she adds. Their flavor? \u201cKind of cheesy.\u201d If you\u2019re still getting the <em>ick<\/em>, that\u2019s okay. Photo courtesy of Valerie Stull<\/figcaption>\n<\/figure>\n<\/div>\n\n\n\n<h3 class=\"wp-block-heading\">Crank that Soldier Fly<\/h3>\n\n\n\n<p>When it comes to edible insects, Stull doesn\u2019t just think about humans. Many other animals \u2014 like chickens \u2014 naturally find arthropods appetizing \u2026 what would happen if we could feed them nutritious bugs while reducing waste at the same time? With the Department of Animal and Dairy Sciences, Stull is working to establish a <a href=\"https:\/\/encyclopedia.pub\/entry\/7597\">black soldier fly colony<\/a> on campus. \u201cOur goal is to use food waste from the dorms and dining halls (that in most cases is otherwise going to landfills) to feed black soldier fly larvae (BSFL). Next, we\u2019ll feed those insects to chickens,\u201d she explains. BSFL can eat pretty much anything, and they break waste down much faster than traditional composting. Plus, when they\u2019re done, you don\u2019t just have compost \u2014 you have an incredibly well-fed pupa which makes a very nutritious snack for chickens or fish. \u201cWe also plan to run a full life cycle assessment with the Office of Sustainability, looking at resources required for insect production along with the nutritional quality of the insects, and long-term we will assess the quality of eggs and well-being of the birds fed those insects,\u201d Stull says. \u201cThe idea is to see how this could work on farms across Wisconsin.\u201d<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Get your [Fridge] Together<\/h3>\n\n\n\n<p>Stull is confident that long-term and large-scale edible insect agriculture could make a huge impact on the sustainability of our food systems. But she acknowledges that no single food or agricultural system is perfect (\u201cIt&#8217;s not like biking where there&#8217;s just benefits.\u201d), and there is no one-size-fits-all solution for our food challenges. But truly impactful change can also start in every household. \u201cJust reorganize your fridge,\u201d she instructs. \u201cThat way you won\u2019t forget what you bought that is most perishable. You\u2019ll eat it first.\u201d In the U.S., <a href=\"https:\/\/www.usda.gov\/about-food\/food-safety\/food-loss-and-waste\/food-waste-faqs\">30\u201340 percent of food goes to waste<\/a>, meaning that all the energy, labor, water, and resources that went in to producing that food is also going to waste. \u201cFood waste is one [problem] where every single person can take action on their own.\u201d<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Valerie Stull sought a nexus between the environment, human health, and nutrition.
